Breakfast Potato Waffle

This recipes calls on the classic yummy, versatile, and filling... POTATO! We're right in the middle of the holidays so at some point, come on... You're gonna have some left over mashed potatoes you need to use up. This is an easy money saving recipe the whole family will love. You just need a waffle iron!


INGREDIENTS:

  • 2 Tablespoons of bacon grease or vegetable oil

  • 1/4 cup buttermilk

  • 1 large egg

  • leftover mashed potatoes (I had around 2 or 2.5 cups)

  • 1 cup shredded cheese (cheddar, pepper jack, mozzarella etc)

  • 1/2 cup all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda


Optional: Mix-Ins Here are some ideas of things you can mix into your potatoes!

  • Meats: Crumbled bacon, ham, chorizo, or sausage (cooked)

  • Sautéed veggies (we used onion, jalapeno, and red bell peppers)

Optional: Toppings

Here are some ideas of things you put on top of your potato waffle!

  • Eggs!

  • Extra cheese!

  • Sour cream

  • Green onions/chives for garnish

  • Salsa

  • Hot sauce

I threw this recipe together last-minute early this morning!



DIRECTIONS:

  1. Preheat your waffle iron. We set ours to medium heat.

  2. Lightly grease your waffle iron with non-stick cooking spray or olive oil.

  3. Mix all dry ingredients in a medium or large bowl.

  4. Slowly stir in the wet ingredients, gently whisking the egg in the process.

  5. Finally add in your potatoes. You will have a much thicker consistency than waffle batter. (Add an additional egg if it is too dry, or extra flour if it is too wet. You want the potato to stick together)

  6. Using a spatula, spread the Potato mixture evenly over the bottom iron. You will need to gently spread it, since the mixture will be fairly thick.

  7. Close the lid of the waffle iron and allow it to cook until the top is golden brown.

Your delicious final product after baking and broiling!


Notes:

  • Be careful not to lift the lid too often while cooking because the potato mix may separate and stick to the top iron if it isn't cooked through when you open it.

  • ALWAYS be careful opening your waffle iron - that steam is HOT! You should also use pot holders when opening it and when removing the iron to drop your potato waffle onto a plate.


How We Eat This:

We topped ours off with a slice of American cheese, some turkey bacon, and scrambled eggs.
