Homemade Meatballs

Meatballs are seriously the easiest things to make - and SO underrated!


They're versatile and can be tweaked to your taste. They also require minimal clean up, which is great when you live busy lives like we do!


Check out this easy recipe that has my hubby begging for more (even though he isn't crazy about spaghetti and meatballs)!





INGREDIENTS:


  • 1 pound of ground beef

  • 1 large egg, beaten

  • 1/4 breadcrumbs or panko

  • 1/4 grated cheese (parmesan is more traditional, but any shredded cheese can be used)

  • 1/4 cup fined chopped onion

  • 2-3 teaspoons of minced garlic (we LOVE garlic so we use 3 tsp)

  • 1 teaspoon of finely chopped fresh rosemary

  • 1 teaspoon chopped parsley (fresh or dried; we use dried)

  • 3/4 teaspoon Cavender's Greek Seasoning (All Purpose)

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 2-3 fresh basil leaves

  • Additional cheese for topping (we used cheddar, but mozzarella is best)




Flip your meatballs about halfway through. If you prefer yours to have a crispier outside, preheat your oven to 400* instead of 350*.



INSTRUCTIONS:


  1. Preheat your oven to 350*.

  2. Line a baking sheet with aluminum foil and lightly coat with a non-stick cooking spray.

  3. Starting with the egg first and lightly beating it, place all ingredients in a bowl and mix until combined.

  4. Do not over mix your ingredients or they will dry out. If this does happen, don't worry! You can add a tiny bit of milk to the mix to moisten it back up.

  5. Scoop the meat into balls about 1-1.5" and plop those babies on the baking sheet.

  6. Pop your pan of meatballs into that preheated oven and cook for around 18-20 minutes.

  7. You may want to flip them with a pair of tongs about halfway through.



HOW WE EAT THEM:


We make spaghetti with our meatballs! Currently we uh... cheat a little... and use Prego spaghetti sauce. BUT we also chop up and saute white onions, garlic, and green bell peppers in a little bit of butter and mix that in the sauce to jazz it up a bit. We also add some extra fresh basil to the sauce as well, and it tastes great!


Hopefully soon, with the plethora of tomatoes we're growing in our garden, we'll have a recipe for homemade spaghetti sauce!


ALTERNATIVES:

I bet you these little balls would be great for a meatball sub! Guess we need to try that next - I know Justin loves them!
